No need for a water world. A world with at least one sizable body of water does the trick just fine. Even allows some nice irony -- "Quopist is nothing but nice sturdy bedrock from pole to pole, except for the Polar Sea. Three guesses where she went down."

For the scenario you want, just have the freighter's CG still working on backup power...but systems are failing, and the power is dwindling. Or just set it on a water world like Bellerophon.  That would make an interesting twist to the adventure...
