Yes we would.  There are at least millions of intergalactic stars
between our galaxy and Andromeda (possibly billions), although we
can't see most of them with our current technology.  With Imperial
technology they would all be easily mapped and used as stepping
stones.

There would likely also be trillions of smaller bodies, but even
Imperial technology might find those difficult to spot at distances of
tens of thousands of light years.
